Peri-peri chicken livers

Serves 4

A delicious combination of flavours 😊

Ingredients:

39ml olive oil

1 onion (chopped)

  1. garlc cloves (crushed)

5ml paprika

1ml ground cloves

10ml cumin

2ml ground black pepper

2bay leaves

1kg chicken livers

125ml chicken stock dissolved in 2 cup boiling water

  • chillies (chopped)

1 tin tomato and onion mix

½ green pepper (chopped)

250ml fresh cream

Serve with a toasted panini

Method:

Heat oil in frying pan. Add onion and crushed garlic and sauté’ for a few minutes until soft.

Add the spices, chillies and bay leaves and sauté’ for a further few minutes. Add chicken livers and peppers to the pan and cook until livers are browned,

Add stock and tomato and onion mix. Simmer for about 10 minutes or unril the livers are cooked through, pour cream in and stir through.

Serve livers with a crispy panini and a glass of Protea Chenin Blanc ☹
