Filled Avocado and Bacon Potatoes

A meal for 2

This is a quick and easy meal which is perfect for a weeknight meal 😊

Ingredients:

2 large potatoes

Salt (to taste)

1 ½ tbsp olive oil

1 onion (chopped)

1 packet bacon (diced)

2tbsp cottage cheese (one tbsp for each potato)

2tbsp peppadews (diced)

1 avocado (mashed)

1tsp lemon juice

Salt and pepper (to taste)

Method:

Preheat Air fryer to 180 degrees.

Used a fork to poke holes all over the potatoes. Pour over a little olive oil and season with salt.

Cook for 30 minutes and then turn over and cook for another 10 minutes. The cooking time will vary depending on the size of your potatoes.

Meanwhile, add a teaspoon of olive oil in a pot. Fry onion until glassy. Add bacon and cook until done. Add peppadews.

Remove potatoes and use a knife to cut crosses into the potatoes. Add a tablespoon of cottage cheese in the middle of each potato.

Spoon bacon mixture on top of cottage cheese.

In a bowl, mash avocado with a fork. Stir in a few drops of lemon juice. Season with salt and pepper.

Spoon mashed avocado over the potatoes.
