Karoo lamb is basically lamb that is raised in Karoo, an area in South Africa, giving a distinctive flavour ๐
Ingredients:
6 Karoo lamb chops
Marinade:
2 garlic cloves (crushed)
25ml wholegrain mustard
40ml white win
Vegetable bake:
10ml cocomut oil
1 large onion (chopped)
1 garlic clove (diced)
2 handfuls of baby spinach (chopped)
10 baby tomatoes (halved)
1 carrot (sliced thinly into strips)
1 yellow pepper (slice thinly into strps)
2 baby marrows (chopped)
2 chillies (chopped)
3tbsp flour
1 ยฝ cups of mil
4 eggs
ยผ cup chopped parsley (fresh)
1tsp mustard
Pinch of salt
1 block of blue cheese crumbled)
Method:
Place marinade ingredients in a mixing bowl and marinade chops while you make the vegetable bake. Set aside.
Preheat oven to 180C
Lightly grease an ovenproof dish with Spray and Cook
Heat coconut oil in a pan. Add chopped onion, chill, garlic.Sauteโ on medium hear. Stir until the onion is transparent
Add prepared vegetables and stirfry until just cooked
Sift the flour over the vegetanles and mix in to moisten the flour
Pour in milk and stir on low heat until the sauce thickens. Remove from the stove.
In a bowl, beat the eggs and then mix it into the vegetable mixture with the chopped parsley
Mix in mustard and salt
Spoon the vegetable mixture into an ovenproof dish. Sprinkle over blue cheese crumbles over the top and bake in a preheated oven for 20-30 minutes or until lightly browned and firm
Preheat airfryer to 200 degrees
Cook chops for 12 minutes on 200 degrees.
