Air Fryer Sweet and Sour Pineapple Pork Fillet served with Oven Roasted Sweet Potatoes and Broccoli

This meal is full of flavour 😊

Ingredients:

1 pork fillet

1tbsp olive oil

1 cup pineapple pieces (chopped into cubes)

½ cup apple cider vinegar

½ cup sugar

2  tomatoes (pureed)

2 green chillies

½ red onion (chopped)

2tbsp soy sace

1tsp garlic (crushed)

Salt and pepper (to taste)

Oven roasted sweet potatoes and broccoli:

2 sweet potatoes (skin on, chopped into small cubes)

½ broccoli (chopped into small florets)

½ red onion (chopped)

3tbsp olive oil

Salt and pepper (to taste)

1tsp garlic (crushed)

1tsp paprika

Method:

Preheat oven to 180C

Place sweet potatoes, onion and broccoli in a single layer on a baking tray. Mix garlic through. Sprinkle over paprika, salt and pepper. Cover with tinfoil. Roast for 15 minutes.

Meanwhile, make the sauce: In a pan, mix together pineapple pieces, vinegar, sugar, pureed tomatoes, onions, chillies, soya sauce and garlic. Bring to boil and then reduce heat and allow to simmer uncovered until thickened. This should take around 20 minutes.

Remove tinfoil from the vegetable. Mix the vegetables around and return to the oven for 30 minutes.

Season fillet with salt, pepper and olive oil.

Preheat Air Fryer to 180 degrees. Cook for about 10 minutes or until pork is cooked through. Allow to rest for 5 minutes and slice.

Serve pork slices with sauce drizzled over. You can drizzle sauce over sweet potato and broccoli as well if you have some left over.
