Honey-Garlic Glazed Salmon served with Roasted Vegetable Couscous

This is a meal for a special occasion 😊

Ingredients:

1/3 cup honey

ΒΌ cup soy sauce

2 tbsp lemon juice

3tbsp olive oil

 2 salmon fillets (patted dry with a paper towel)

Salt and pepper (to taste)

  • garlic cloves (crushed)

couscous:

2 jam tomatoes (chopped)

2 baby marrows (chopped into quarters)

1red bell pepper (deseeded, chopped)

1 red onion (chopped)

2 garlic cloves (crushed)

1 tbsp olive oil

Salt and pepper (to taste)

1 cup vegetable stock

1 cup couscous

Method:

In a bowl, whisk together honey, soy sauce and chopped red pepper

In a pan over medium heat, heat 2tbsp olive oil. When the oil is hot, add salmon, skin side up and season with salt and pepper. Put the lid on and cook the salmon until it is deeply golfrn (about 6 minutes). Flip over and add he remainder of the oil

Add garlic to the pan and cook until fragrant (about 1 minute)

Add the honey mixture and cook until sauce is reduced by about 1/3

Baste salmon with the sauce. Set aside.

Meanwhile, add veggies to the air fryer. Mix with 1 tsp olive oil. Cook for 10 minutes at 180 degrees.

Add one cup of chicken stock to couscous and put a plate over it so that the it can be absorbed.

Add veggies from the air fryer and mix together

Serve salmon with a helping of couscous on the side

Serve with a glass of Chenin Blanc 😊
