Chicken & Corn Soup

A delicious meal perfect for a cold evening😊

Ingredients:

1 red onion (chopped)

2 celery ribs (chopped)

4 chicken breasts (cubed)

1 cup boiling water & 1 Tbsp chicken stock

1tsp salt

¼ tsp black pepper

2 cups water

1 can cream style sweetcorn

toast or rolls (to serve)

Method:

 Place the first 7 ingredients in a cast iron pot an bring slowly to boil.

Reduce heat and simmer uncovered until the chicken is no longer pink and the vegetables are tender, for about 30 minutes.

Add the sweetcorn and cook uncovered for about 10 minutes, stirring occasionally.

Serve with buttered toast or roll.
