Easy Coq au vin served on sweet potato mash

Serves 4

This delicious meal is perfect for a cold and rainy evening 😊

Ingredients:

2Tbsp Olive oil

8 chicken pieces (skin on, bone in)

5Tbsp flour

1Tbsp Mixed Herbs

1 packet bacon bits

1 red onion (chopped)

2 carrots (chopped)

2 baby marrows (topped and tailed, chopped)

2 sprigs fresh rosemary

2 sprigs fresh thyme

1 cup Merlot

1 cup chicken stock

2 sweet potatoes (skin on, sliced)

1 Tbsp butter

Method:

On a plate, place flour and mix in herbs.

Heat 1Tbsp oil in a frying pan. Coat the chicken pieces with flour ad place the chicken pieces in the oil. Brown until crisp and then remove the chicken onto a plate.

Add all the vegetables and herbs and bacon with 1Tbsp olive oil. Add chicken pieces. Pour in wine, scraping the pan to deglaze, for 2-3 minutes. Bring to boil.

Add chicken stock and make sure that chicken is immersed. Cook uncovered for 10 minutes until the liquid has reduced by half and chicken is cooked through

In a pot of boiling water, cook sweet potato pieces until soft. Drain, add butter and mash until there are no lumps left

Serve chicken, vegetables and sauce on sweet potato mash.
