Spicy Chicken Casserole with Red Wine served with Sweet Potato Bake

Serves 4

Always use what you have in the house and make a meal that makes you proud!

Ingredients:

1 onion (peeled and chopped)

1 cup red wine

1 cinnamon stick

1 tbsp all spice

8 chicken pieces (thighs, legs and breasts; skin on)

2 tomatoes (pureed)

2 green chillies (chopped)

 

Sweet potato bake:

2 small sweet potatoes (chopped and quartered)

1 yellow pepper (diced)

1 red onion (diced)

1 garlic cloves (peeled and crushed)

5ml paprika

250ml grated cheddar

125ml cottage cheese

 

Method:

Heat oven to 180C

Add chicken pieces to an ovenproof dish.

In an electric chopper, add onion, tomatoes, chillies and all spice. Chop until smooth. Pour over chicken.

Cover with foil and bake in oven for 45 minutes to 1 hour. Remove foil 10 minutes before ready and grill to crisp the skin of the chicken.

Boil chopped sweet potato until soft. Add to ovenproof dish. Chop diced yellow pepper and pepper. Add to ovenproof dish. Stir through cottage cheese. Grate cheese over the top.  Bake until cheese is melted.

Serve spicy chicken with sweet potato bake
