Adapted from the Silver Spoon Cookery book
This was my first-time cooking Mackerel and it definitely won’t be the last. The French beans compliment the oiliness of the fish so nicely.
2 tbsp. olive oil
1 onion (sliced)
1 carrot (chopped)
1 fresh thyme sprig
150g green beans (trimmed)
1 tomato (chopped)
2 tbsp. capers
Salt and pepper
Heat 1tbsp olive oil in pan. Add onion, carrot and thyme. Cook over low heat, stirring occasionally for 5 minutes. Add beans and stir frequently for 15 minutes. Add tomato and capers. Season with salt and pepper.
Heat remaining oil in another pan. Add mackerel and cook until golden brown and fish flakes easily with a fork. Remove with a slotted spoon and add to the pan of vegetables. Cook for a further 5 minutes. Taste and adjust seasoning if necessary.
